Rava upma

INGREDIENTS:

  • Rava/Semolina  - 1 cup
  • Medium Onion   – 1
  • Mixed Vegetable – 1 cup (Carrot,Beans,Peas,Corn)
  • Peanut – 3 tsp
  • Channa dal – 1 tsp
  • Musterd Seeds – 1 tsp
  • Urad Dal – 1 tsp
  • Cashewnut – 6 pieces
  • Grated ginger – 1 tsp
  • Green chillies – 3
  • Red chillies – 2
  • Salt – to taste
  • Oil – 2 tsp
  • Ghee – 2 tsp
  • Lemon juice – 2-3 tsp (optional)
  • Hing- 2 pinch
  • Water- 2- 3 cups
  • Curry leaves

PREPARATION:

  • Pre-fry the rava/sooji (just before golden brown) without oil in a pan and keep it aside.
  • Take a kadai and add oil. When the oil is hot add Mustard seeds ,Chana dal,urad dal,peanut,cashew fry all till golden brown color. Keep the stove in the medium heat.
  • Then add green chillies,red chillies,curry leaves and grated ginger.
  • Then add finely chopped onion and fry it until golden brown.Then add hing and saute it.
  • Add the vegetables,pour the water and add salt.Let the vegetables cook until tender.
  • When it is done add the rava/sooji little by little while constantly mixing it. Cover the kadai with the lid, let it cook for few minutes (10 min).
  • If u need more water add hot water.
  • Finally add the ghee and sauté it.This gives more flavour and aroma to the dish.
  • After switching off the stove squeeze the lemon juice and sauté it.
  • After preparation,let it warm for 5 min in the Stove.
  • Serve it hot with pickle or sambar and chuttny or Chips.

Medhu Vadai is the Indian version of donut, but spicy. Who doesn’t like a donut with coffee for breakfast in any part of the world.?

Spicy Lenthil Donut (Medhu Vadai)
INGREDIENTS:

  • Urad dal – 1 cup
  • Green chilli – 2- 3 nos
  • Salt – to taste
  • Oil – to fry
  • Medium Onion – 1 no
  • Hing – ¼ tsp
  • Curry Leaves – 2 sprigs
  • Crushed Pepper – 2 pinch (optional)
  • Cumin Seeds – 2 pinch (optional)

PREPARATION:

  • Soak urad dal in water for 5 – 6 hours.
  • Then drain all the water. Grind urad dal with green chillies until the batter becomes fine. If you need water, just sprinkle it. The batter should be more of a thick consistency.
  • Then transfer the grind product in to a big bowl.
  • Add salt,hing,curry leaves. Mix it very well.
  • Optional Step : Add cumin seeds,crushed pepper.
  • Beat the batter for at-least 15 min with hand so it’s nicely aerated. You don’t need to do this if you prepare the batter by using a wet grinder.
  • Add onion and mix it.
  • Before making a vadai ball dip your palm in water, then make a vadai ball by scooping in the palm, put hole in the center using your thumb, drop in to the heated oil.
  • Cook each side 3-5 min until golden color. Make sure that cook in the medium flame.
  • Finally u can get the crispy and tasty snack.
  • U can serve it hot with chutney and sambar along with Idli/Pongal.

This receipe is a quick,easy and healthy snack. No need to soak it before. This is the perfect dish for Navarathri Neivedhayam to the goddess.

Kadalaparuppu Sundal
INGREDIENTS:

  • Channa Dhal – 1 cup
  • Salt – to taste
  • Green chillies – 2 or 3
  • Mustard Seeds – 1 tsp
  • Oil – 2 tablespoons
  • Grated coconut – 4 tablespoons
  • Hing – 1 pinch
  • Curry leaves

PREPARATION:

  • Wash the channa dhal in water.
  • Take the pressure cooker. Make sure the water kept for pressure cooking should be just that it dips the dhal. Keep for 2 whistles. Don’t overcook or it will become mushy.
  • Then cool,drain all the water.
  • Pulse the grated coconut and green chillies without adding any water.
  • Take a pan add oil and fry the mustard seeds, curry leaves , hing.
  • Add the strained dhal and saute for a few minutes.
  • Then add the pulsed coconut mix and salt .
  • Serve it hot.
Semiya Kichadi (Vermicelli Kichadi)

INGREDIENTS:

  • Semiya (Vermicelli) 1 Cup
  • Tomato 1
  • Onion 1 (finely chopped)
  • Cut Vegetables 1 Cup (carrots, beans, peas, corn)
  • Ginger – small piece
  • Green chilli 2
  • Cumin Seeds 1/2 tsp
  • Mustard Seeds 1/2tsp
  • Channa Dal – 1/2 tsp
  • Urad Dal – 1/2 tsp
  • Turmeric Powder 1/4tsp
  • Salt to taste
  • Pinch of hing
  • Oil – 2 tsp
  • Cilantro
  • Curry Leaves
  • Water – 2 cups

PREPARATION:

  • Optional Step : Pre-fry the vermicelli (just before golden brown) without oil in a pan and keep it aside.
  • Take a kadai and add oil. When the oil is hot add Mustard seeds, channa dal, urad dal & Cumin Seeds.
  • After they split add green chillies and grated ginger.
  • Then add finely chopped onion and fry it until golden brown.Then add turmeric powder, hing and saute it.
  • Add the tomato and vegetables,pour the water and add salt.Let the vegetables cook until tender.
  • When it is done add the semiya and saute, cover the kadai with the lid,let it cook for few minutes.
  • If u need more water add hot water.
  • Finally garnish with cilantro and corander leaves.
  • After preparation,let it warm for 5 min in the Stove.
