Bhindi (Okra) Masala

SERVING SIZE – 2

INGREDIENTS:

  • Ladies Finger(Bhindi/Okra) – 2 cups (chopped)
  • Onion (big) – 1
  • Tomato (M) – 1
  • Ginger (Finely chopped) – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Red chili powder – 1 tsp or to taste
  • Coriander powder – 1 1/2 tsp
  • Garam masala – 2 pinches
  • Oil – 2 tbsp
  • Mustard seeds – 1/2 tsp
  • Salt – to taste
  • Curry leaves – few
  • Coriander leaves – few

PREPARATION:

    • Take a kadai, heat the oil and add mustered seeds. When it splutters, add curry leaves and  the chopped onion. Saute until it turns golden then add the ginger and saute it for few seconds.
    • Add the turmeric powder and mix it well. Add the chopped tomato and saute until the raw smell is gone.
    • Then add the chopped Bhindi/Okra and add 2 to 3 spoon of water and mix it well. Cover it with lid and cook it in the medium flame. Often mix it well. If it is very dry sprinkle some water. When it is 3/4 cooked, add salt and mix it well.
    • Add Red Chili powder, Coriander powder and Garam Masala and mix all of them well. Cook it for few minutes.
    • Finally add the chopped coriander leaves and mix it well.
    • Serve it hot with rice or Roti.

Note:

  • Better use non – stick kadai.
  • Make sure Bhindi/Okra is not mushy.It’s supposed to be dry curry.

    1. Hi Anbu Priya, Hing is the other name for Asafoetida (Perungayam in Tamil).
