Sevai  Varities - Sweet Sevai , Lemon Sevai, Cocunut Sevai, Curd Sevai

Sweet Noodles / Sevai / Idiyappam

Ingredients:

  • Grated Jaggery – ¾ cup [or] to taste
  • Cooked Rice Noodle /sevai/Idiyappam – 1 cup
  •  Cardomom powder – 2 pinches
  • Ghee – 1 tbsp
  • Cashew nuts – 5 nos

Preparation:

  • Take a kadai, add the jiggery. Melt it and bring it to boil for 2 min and add the cardamom powder and ghee. Mix it well.
  • Add the cooked noodles and mix it well. Garnish it with fried cashew nuts.
  • Serve it hot.

Lemon Sevai

Ingredients:

  • Cooked Rice Noodles /Sevai/Idiyappam – 2 cups
  • Lemon Juice – 2 tbsp. [or] to taste
  • Green chilies – 3 nos (finely chopped). [Or] to taste
  • Ginger – ¼ tsp. (finely chopped).
  • Gingily / Sesame oil – 3 tbsp
  • Mustard Seeds – ¼ tsp
  • Urad dal (broken) – ¼ tsp
  • Peanut – 1 first full
  • Asafoetida – 2 pinches
  • Curry leaves – 1 sprig
  • Salt – to taste

Preparation:

  • Take a kadai, heat the oil add mustard seeds when its splutters add urad dal and peanuts when its gets golden color add the green chilies, ginger, turmeric powder, Asafoetida and curry leaves. Mix it well.
  • Mix the tempering, lemon juice and salt with the cooked noodles.
  • Serve it hot with chutneys or sambar or eat as it is.

Coconut Sevai

Ingredients:

  • Cooked Rice Noodles /Sevai / Idiyappam – 2 cups
  • Grated coconut – 4 tbsp. [or] to taste
  • Green chilies – 3 nos (finely chopped). [Or] to taste
  • Ginger – ¼ tsp. (finely chopped). [OPTIONAL]
  • Gingily / Sesame oil – 3 tbsp
  • Mustard Seeds – ¼ tsp
  • Urad dal (broken) – ¼ tsp
  • Channa dal – ¼ tsp
  • Asafoetida – 2 pinch
  • Curry leaves – 1 sprig
  • Salt – to taste

Preparation:

  • Take a kadai, heat the oil, add mustard seeds. When it splutters, add Urad Dal and Channa Dal. When it gets golden color, add the green chilies, ginger, Asafoetida, grated coconut and curry leaves. Mix it well and cook it until coconut gets slightly golden color.
  • Mix the above tempered mix and salt with the cooked noodles.
  • Serve it hot with Chutney or Sambar or as is.

Curd Sevai

Ingredients:

  • Cooked Rice Noodles /sevai/Idiyappam – 1 cup
  • Curd – ½ cup
  • Ghee – 1 tsp
  • Mustard Seeds – ¼ tsp
  • Green chilies – 1 no (finely chopped). [Or] to taste
  • Ginger – ¼ tsp. (finely chopped). [OPTIONAL]
  • Asafoetida – 2 pinches
  • Curry leaves – 1 sprig
  • Salt – to taste

Preparation:

  • Take a kadai, heat the ghee and add mustard seeds. When it splutters, add green chilies, ginger, Asafoetida and curry leaves.
  • Mix the tempering and salt with the cooked noodles.
  • Serve it hot with pickle or eat as it is.
