Thanks to my Mother-in-law who is here with me on a visit, I am learning a lot of authentic recipes. And for a while I am throwing away my weight watching hat and putting my awesome sweet hat. This Tomato Jam is a regular in Tamilnadu for most functions and marriages and goes well as one of the side dish for any recipe/meal.
Ingredients:
- Tomato [Large] – 3 nos [cut the tomatoes into medium size chunks]
- Sugar – 2 cups
- Cashew nut – 10 nos [break it into half]
- Raisins – 20 nos
- Dates – 6 nos [remove the seeds cut in to half]
- Cardamom powder – 2 pinches
- Ghee – 1 tbsp
Serves – 30-40 tablespoons
Preparation Time – 40 min
Preparation:
- Heat the Kadai and add Ghee. Fry the Cashew nut until it gets golden color. Keep it aside. Fry the raisins and the dates similarly.
- Take a heavy bottom pan and add the Sugar and enough water so as the sugar is covered. Let the sugar melt and bring it into boil.
- Add the cut Tomatoes. Let it cook until the content becomes thick. Cook it in the medium flame. Approximately it takes 30 minutes.
- Add the fried items and Cardamom powder into the jam. Mix it well.
- Serve it warm. You can eat it with any Recipe. Even with bread it goes very well.
Note:
- You can keep the Jam until 1 week at room temperature.
- Do not close the vessel with lid when cooking to avoid overflow.
