Vegetable Pakoda (Pakora)

INGREDIENTS:

  • Onion (Big size) – 1 no (Cut lengthwise)
  • Carrot – ½ size cut into small tiny pieces
  • Potato – 1 medium size (cut into tiny pieces)
  • Green chilies – 2 nos (Finely chopped)
  • Ginger- 1 inch piece (Finely cut lengthwise)
  • Curry leaves – few (Finely chopped)
  • Coriander leaves – few (Finely chopped)
  • Salt – to taste
  • Red Chili powder – 1/4 tsp or to taste
  • Gram Flour/Besan – 1cup
  • Rice flour – 1/3 cup
  • Cumin seeds – 1 tsp
  • Oil – 2 tbsp
  • Baking powder – 2 pinch
  • Hing – 1 pinch
  • Oil – for deep fry

Vegetable Pakoda Ingredients

PREPARATION:

    • Take a big bowl add the gram flour, rice flour, baking powder, cumin seeds, oil, hing, red chili powder and salt. Mix it well.
    • Add the chopped onion, carrot, potato, green chilies, ginger, coriander leaves, curry leaves into it and mix it well. You can sprinkle some water and mix it all together. The consistency should be as seen in the picture below (When you pick it in hand, the ingredients should be able to hold together and yet gravitate). Do not make is watery.

Vegetable Pokora Batter

  • Take a kadai and heat the oil, take the mixture and break into small piece units and fry into the oil until golden color. Cook it in the medium flame.
  • Serve it hot with chutney and sambar or with tamarind chutney.

Note:

  • If the mixture little watery, then add little gram flour and mix it well. You can also mix and match vegetables as you like.

    even i want to try this mixed veg pakoda for a long time.looks very nice and yummy madhu.sometimes i add bajji mix to onions and make pakoda.
