Rava Kesari

Recipe Categories: Dessert, Indian, Sweets

It’s been  2 months since I posted any recipe. Was busy shifting houses. Back to Cooking now and starting off with a nice Sweet – Rava Kesari!

Rava Kesari

Ingredients:

  • Rava/Sooji – ½ cup
  • Water – 1 1/2 cup
  • Sugar – 1 cup (Adjust according to your taste)
  • Kesari color powder – ¼ tsp
  • Ghee – ½ cup
  • Cashew nuts – 5 nos
  • Raisins – fist full
  • Cardamom powder – 1 pinch
Serves – 3 to 4 persons

Preparation Time – 30 min

Preparation:

  • Boil 1.5 cup of water and keep it ready. It has to be really hot.
  • Take a Kadai, add few spoons of Ghee and roast the Cashews and Raisins. Fry until it’s golden color. Take it out and keep it aside.
  • In the same Kadai, add one spoon of ghee. Add the Rava/Sooji and fry until aroma comes out. Keep on stirring or it will burn. Slowly add the water and keep on stirring until no lumps. Cover it with lid. Cook it for few minutes until Rava gets cooked. Cook it in the medium flame.
  • Slowly add the Sugar and Kesari color powder, mix it well without any lumps. Now it looks and becomes watery (don’t panic). Stir it well for few more minutes until it gets thick.
  • Add the Ghee and Cardamom powder and mix it well. Stir it well until it becomes non sticky (must be sliding like a ball in the pan).
  • Garnish it with fried Cashew nuts and Raisins.
